From Our Table to Yours: Family-Favorite Recipes

Cheesy Eggs and Crepes are two of our all-time favorite recipes. We love sharing them because they’re simple, satisfying, and full of flavor. Most people know what a crepe is—but what they may not realize is just how versatile and fun they can be! Whether sweet or savory, crepes open the door to endless culinary creativity. And when it comes to cheesy eggs, there’s just something comforting and delicious about that warm, melty goodness. Once you try these favorites our way, they just might become a regular go-to in your own kitchen too.

Let’s Get Started: Prep and Ready to Go

Crepes:

This is hands down the best crepe recipe we’ve ever found—and we’ve been using it for over 20 years. It’s simple, reliable, and perfect for that “dip, cook, and release” technique. That’s the beauty of it. These crepes fold and roll beautifully, store well in the fridge for a few days, and freeze for weeks—though to be honest, they rarely last more than a day in our house!

You can use the batter right away, but for extra tender crepes, we recommend letting it rest for a few hours. Our go-to method is making the batter the night before and refrigerating it overnight. And here’s a tip from experience: we never make just a single batch. A double batch is our standard, and when we’re cooking for a crowd, we simply make multiple double batches—never triple or more. After decades of making crepes, we’ve found that doubling the recipe offers the best texture and consistency every time.

Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • œ cup milk
  • œ cup water
  • ÂŒ teaspoon salt
  • 2 tablespoons melted butter (or margarine, though we always recommend butter for the best flavor)

Blending Time!

To get started, use a blender or immersion blender (as shown in our presentation video). Add all the ingredients in the order listed above and blend until the mixture is completely smooth—no lumps! Make sure to scrape down the sides of the blender or bowl with a spatula to incorporate any flour that might stick. The goal is a smooth, silky batter—not overly whipped or frothy.

If mixing by hand, begin by whisking together the flour and eggs. Add the salt, then slowly pour in the milk and water while continuing to whisk until the batter is smooth. However, for the best results and easiest prep, we definitely recommend using a blender.

The batter consistency should resemble thick heavy cream. Since we live at a higher elevation, we’ve learned to gauge the flour by feel, but in most areas, it’s best to level off your flour with a straight edge for accuracy.

Pro Tip: We highly recommend using a crepe maker instead of a traditional frying pan. The one we use is cordless, comes with a batter dish and spatula, and is incredibly convenient—not to mention it makes a wonderful gift.

And yes, feel free to share the recipe above—it’s been our go-to for decades, and we’ve yet to find one that tops it!

This recipe is always a hit and includes some great subtle techniques, which I share in the accompanying videos. The ingredients are simple, but the results are impressive.

  • Use 1 ounce of water for every 4 eggs.
  • Eggs: Use as many eggs as you think your hungry fans will need—4, 6, 8, or even 10. Surprisingly, even when we make extra, there are rarely any leftovers. These cheesy eggs are perfect inside crepes, and some even like to enjoy extra on the side.
  • Cheese: We have enjoyed using the shredded cheese or cheese slices. Thin is best, you do not want thick slices as they will melt slower than needed. Cheddar, Gouda, Swiss. We have utilized many different cheeses over the decades. The cheddar / Monterey jack mix works well.
  • Basic Seasoning: Salt and Pepper
  • PAM or similar non-stick spray

Start by cracking the eggs into your mixing bowl. Add water at a ratio of 1 ounce per 4 eggs—this helps create a light, fluffy texture and gives the crepes an airy bite every time. Mix the eggs and water until smooth. We use an immersion blender for this step, as shown in the videos. They’re incredibly handy, easy to clean, and simple to store—definitely worth having on hand.

Next, turn on your burner to medium-high heat and adjust based on your stovetop’s settings. We know our stove well and have pinpointed the perfect heat level for cooking these crepes. Once your pan is heated and ready on the burner, follow the steps below in order.

  1. Remove the pan from the heat and lightly spray it with PAM cooking spray—or, even better, a healthier alternative. Make sure to coat the surface evenly, especially if you have a good non-stick pan. You’ll definitely notice a difference when this step is skipped.
  2. Return the pan to the burner, then sprinkle pepper to taste into the warming pan. Let the heat gently warm the pepper as the pan heats up.
  3. Next, add salt to taste. We use only a little since the cheese already contains salt, but feel free to adjust according to your preference.
  4. After about 10 to 20 seconds, add some cheese and allow it to start melting.
  5. Once the cheese begins to melt—not fully melted yet—pour in the blended eggs.
  6. Stir gently as the eggs cook, adding more cheese as you go until it’s cooked to perfection. We like the eggs moist but not too runny or overcooked.
  7. Be sure to save some cheese to melt on top at the end. This creates a fun, gooey presentation that’s perfect when you cut the cheesy eggs and add them to your crepes before rolling.

Best to Roll Cheesy Eggs into Crepes While Hot!

Once the cheesy eggs are cooked, they’re ready to be added to a crepe and rolled up for a delicious, savory treat. It’s an easy dish that always impresses. Even those who say they don’t like eggs often find this to be a total game-changer for their taste buds. The combination of fluffy, cheesy eggs with the soft, delicate crepe creates a perfect balance of flavors and textures that’s hard to resist.

One of the best things about this dish is its versatility. You can customize the cheesy eggs to suit your preferences or dietary needs. Add some fresh herbs like chives or parsley for a burst of color and flavor, or throw in a little diced ham or cooked bacon for a heartier meal. You can also swap out the cheese for different varieties—cheddar, mozzarella, feta, or even goat cheese all work beautifully. This adaptability means it can be a quick breakfast, a satisfying lunch, or even a light dinner.

If you have a picky eater—whether a child or loved one—try rolling the cheesy eggs inside a crepe and let them taste it without telling them it’s eggs. You’ll be amazed at their reaction! They might just ask for this tasty dish again and again. The crepe acts as a gentle disguise, softening the egg’s texture and masking the typical egg flavor that some people find off-putting. Plus, the melted cheese adds a creamy richness that helps win over even the most reluctant eaters.

For parents, this recipe can be a lifesaver. Getting kids to eat eggs can sometimes feel like a battle, but the crepe wrap transforms the experience into something fun and approachable. You can even turn it into an interactive meal where kids help roll their own crepes filled with cheesy eggs and other toppings like sautéed veggies, avocado slices, or a dash of salsa. This hands-on involvement often sparks curiosity and excitement about trying new foods.

The ease of preparation also makes this dish perfect for busy mornings or when you want a quick meal without compromising on taste. Crepes can be made ahead of time or bought pre-made, and the cheesy eggs take only minutes to whip up. Once assembled, you’ve got a portable, mess-free meal that’s great for on-the-go breakfasts or packed lunches.

In summary, cheesy eggs rolled in a crepe is a simple, delicious, and surprisingly versatile dish that can win over even picky eaters. Its creamy, savory flavor and soft texture make it a comfort food that feels special without requiring complicated cooking skills. So next time you want to impress at breakfast or sneak some extra nutrition into a meal, give this recipe a try—you might just discover a new favorite.

Another great benefit of cheesy eggs rolled in a crepe is how easily you can tailor it to suit different dietary needs or preferences. For those who are gluten-sensitive, you can make or buy gluten-free crepes without losing the deliciousness of the dish. For a dairy-free version, simply swap out the cheese for a plant-based alternative or omit it entirely and add flavorful veggies or avocado to keep things creamy and satisfying. The beauty of this dish lies in its flexibility, making it accessible to almost anyone.

Additionally, this meal offers a wonderful balance of protein, carbs, and fats, making it both nourishing and filling. Eggs provide high-quality protein and essential nutrients like choline and vitamin D, while the crepe offers energy from carbohydrates. The cheese adds richness and fat, helping to keep you full and satisfied for hours. This balance is perfect for starting your day on the right foot or for fueling your body during a busy afternoon.

You can also experiment with different seasonings to keep this dish exciting every time you make it. A pinch of smoked paprika, garlic powder, or even a dash of hot sauce can elevate the cheesy eggs to new flavor heights. Adding sautéed mushrooms, spinach, or tomatoes inside the crepe alongside the eggs can boost the nutritional content and add vibrant colors to your plate.

Finally, cheesy eggs in a crepe make for a great presentation when entertaining guests or serving family brunch. They look elegant yet are simple to prepare, making them perfect for special occasions or casual gatherings. Pair with a fresh salad or fruit on the side, and you’ve got a well-rounded, crowd-pleasing meal. đŸ„šâž•đŸ§€=😍 (eggs + cheese = yum)
